I tried making my own kefir from C.O.U. I.P. (crystals of unknown internet origin) about 15 years ago. After a while I realized I wasn't man enough to drink that stuff, so I moved to the supermarket brands. They're OK, but expensive, and throwing the plastic bottles away on a weekly basis bothers me and the planet on which I live with you. Making my own with these products from New England Cheese Making yields a delicious, creamy kefir, which I add to my steel cut oats and blueberries very morning, and no plastic bottle to throw away every week. My overall experience? Delighted!
