Stainless Steel Skimmer
This stainless steel skimmer is a staple for all cheese makers. The slotted design lets whey drain from the curds, as they are scooped out of the pot, and placed into draining cloth or cheese molds. This skimmer can also be used to mix ingredients into milk and stir curds while heating.

Should be boiled, to sterilize, before each use.
After use, wash in hot soapy water and allow to dry.

I love this tool...the way it smoothly glides across the bubbling water to capture delicate morsels of ivory goodness. This little friend makes the process of cheesemaking incredibly easy! My "Skimmy" might be "skinny" but she is a titan in the kitchen!!!
I bought this spoon because I was enrolled in a Cultured Dairy Course. It worked beautifully to gently pick up curds to check on them, easily sliced any that needed it, and for transferring them to a different dish. Since then I have learned the skimmer also works beautifully to remove fat from chicken stock and to blanch small amounts of vegetables. I’m sure I could find even more uses for it. Whereas it is a solid good quality stainless steel I’m not concerned about contaminates remaining on the skimmer. It is shiny, beautiful, and has no sharp edges. I highly recommend.
This tool is so basic that I actually thought I might not need it. After all, I've got slotted spoons, right?!? Wrong! The Stainless Steel Skimmer has a flat, round surface to gently scoop curds out of the whey and transfer them to your strainer. It saves loads of time in the process because the skimmer is so broad. The skimmer is very high quality - as we would expect from New England Cheese Making Supply Co - and the price is right! Even if you dabble in cheesemaking you need this tool!
This has been an amazing tool to use. It’s long enough to use easily. It makes skimming ricotta a breeze. We’ve used it for ladling curds for cream cheese and Camembert as well and it just makes things go much easier.
It's the perfect size. It's the perfect shape. It will last forever. Why did I wait so long to get one? It's my new favorite tool from the cheese drawer.
