This Mesophilic culture is used in making a variety of hard, moderate temperature cheese including Cheddar, Monterey Jack, Stilton, Edam, Gouda, Muenster, Blue, and Colby.
Five individual packets are included, for easy use. Simply add one packet directly to heated milk to begin the cheese making process. This culture is great for beginner and advanced cheese makers alike.

Brie is my favorite cheese. I'm not sure what nudged me to try making it but my search for a Brie recipe led me to NE Cheese Making Supplies. There I found the recipe as well as the supplies I'd need. I purchased the minimum equipment necessary to attempt my first batch. I had a small wine chiller that wasn't being used so I used that for my "cheese cave". I followed the recipe from their website and was delighted when my wife and I sat down with crackers and my fist wheel of Brie. So this is what food heaven is. On a couple of occasions I've needed to contact them and was amazed at how quickly they responded Their customer service reminds me of the Mom and Pop businesses of my youth. Very good product. I use it all the time. Works well on raw milk, skimmed raw milk and even on real buttermilk.
