Blue or Roquefort Cheese Mold
This blue cheese mold is the ideal choice for Roquefort, Gorgonzola, and many other types of blue cheese, but not Stilton. With a capacity of approximately 6.6 pounds this mold will form a hefty batch of blue cheese. Drainage holes throughout the sides and bottom provide ideal drainage as the curds consolidate.
Blue-style cheeses are generally molded and allowed to drain under their own weight, so no follower is needed or included with this mold.

i should have bought two (minimum). Made many Gorgonzola.
I'm making a soft blue cheese with kefir fermented curds. I tried it in one of those molds with lots of slits, and they leaked. This is just right for drainage for this cheese, and the vertical sides are important, too. I could have made a four gallon batch with this mold, but am currently using 2 gallons per batch.
