Description
This cheese press is proudly made in the USA and built to last a lifetime. Made from solid hard wood, Maple, this press is well balanced and easy to use.
Pressure is applied by hanging weights at one of four notches on the lever arm. Each notch is a multiple so you can calculate how much pressure is being applied. For example, a 5 lbs weight hung on notch three will provide 15 lbs of pressure.
With an ability to apply up to 100 lbs of pressure, this press can be used with cheese weighing up to 10 lbs.

Recognizing Proper Pressing Weight
The proper amount of weight for pressing should be specified in each cheese making recipe. However, this can sometimes lead to over or under pressing, due to the final cheese moisture or fat content of the curds.
Excessive cloudy/milky whey or even butterfat leaking with the draining whey or on the cheese surface when turning, are signs of over pressing. Higher fat cheese requires less weight in early pressing stages when butterfat is still in a liquid state.
Under pressing will result in unconsolidated curds in the final cheese. This can be identified with open curd spaces on the rind or excessive open spaces in the cheese body.
A tight smooth rind with open space in the cheese body can be from applying excessive press too soon. This would seal the surface and trap moisture inside. This is usually accompanied by a cheese leaking moisture in the aging room.

Thank you for making such a nice home press available. We can't wait to give our Dutch Cheese Press a whirl!

This was super easy to assemble and also to use. The materials appear to be good quality. If I was persnickety (or had those kind of visitors) I would probably want to sand off a little of the rough edges in a couple spots. But we're pretty redneck here and the rough edges do not affect function at all. The only thing I added is a thin piece of metal to insert in the marked slot... it's actually the metal belt/pocket clip from a defunct pocketknife. This keeps the weight from sliding down. (You can see it in the pic). Seems like that should probably come with the press--or perhaps the grooves should be deeper. This is the only reason I gave it 4 stars instead of 5. Anyway, we are used to improvising. And overall I am perfectly satisfied.

I believe this press will be quite serviceable, but it has a rather unfinished quality. The holes in the plunger were so splintery that they needed to be sanded or filled off to make them smoother. On the plus side, the press was child’s play to put together even though the little nail referred to in the instructions was missing from the supplies.. Also, the price was reasonable. I can’t wait to use it.

I am having so much fun with this. I enjoyed putting it together and watching it work. I need to find better weights. I used what I had around house. I used different containers with different amounts of liquid in. I want to add my photo but can not figure out how.

Don’t waste your money. The press exert uneven force on the cheese when pressing, making one side more compacted than the other. Worst buy ever.
