This pasta filata cheese mold can be used to form Provolone and other types of pasta filata (stretched curd) cheese. Once formed, the cheese can be aged on a shelf, or tied in a barrel wrap to hang. This uniform shape eliminates the wasted end piece that is usually lost when formed in a traditional pear shape.

I was a little hesitant when I went to use this mold, however I was very happy with the results! I did end up cutting my cheese in half when I took it out of the mold to put it in the brine as my brine container is not as long cylindrical as the mold is.
