Flora Danica is a mesophilic type cheese making culture that adds a buttery flavor to a variety of soft cheese including Havarti, Gouda, Edam, Camembert, Brie, Feta, Blue, Buttermilk, Sour Cream, Cream cheese, Creme Fraiche and Cultured Butter. This culture will produce a small amount of carbon dioxide gas, which make it a great choice when a lighter textured cheese is desired.
Flora Danica be used as a direct set culture or to incubate a mother culture.

Best Butter Ever
I use Flora Danica as an addition to the other ingredients necessary for making Mozzarella and for making cultured butter, I find it creates not only a wonderful floral aroma but it gives a rich buttery taste that takes these two items an amazing, over the top quality that reminds me of my Grandmothers homemade cheese and butter. Once you try this you won't go back to bland, flavorless Mozzarella or cultured butter again.
