Shake well before use.
Mix required amount of rennet in about 1/4 cup cool, non-chlorinated water. Immediately add diluted rennet to milk, gently stir for 1 minute, to evenly distribute.
Note: The amount will vary on the condition of your milk, season and type of cheese you are making.

I have been making cheese for about 4 years. I have tried liquid rennet, vegetable rennet, and rennet tablets before trying the rennet paste. I loved the cheese the rennet paste made. Now this is my go to rennet of choice.
Nice set for soft cheeses
I bought Walcoren calf rennet as a substitute for Renco Calf rennet. So far I have had good results with my triple crème and fresh cheese. I am happy with behavior and quality of curd. However, I have not had good result for pasta filata and swiss cheese. This rennet does not behave exactly the same as the Renco. You seem to need slightly more and/or have to leave longer to get similar results. I feel confident that I will have successful results once I adapt my quantity/coagulation time to match this rennet. Like other customers, I like having product in original packaging.
Perfect every time
5 stars for this rennet. I have made cheddar, Colby, triple cream, and a Guidos Italian cheese. They all set beautifully and right on time.
Excellent Alternative to Traditional Rennet
I'm on my second bottle and could not be happier. I've tried other liquids and even tablets. Initial draw was the size of the bottle, not too much so I'm throwing it out and not so little that I need to reorder every few months. Each bottle should cover 250 gallons of milk. In addition, it comes in the manufacturer's packaging so you know exactly what you are getting; no other liquid rennet in smaller sizes comes this way, all are repackaged so you have to guess the origin, which may change over time. As a plus, the WalcoRen web site provides even more details. This rennet gives excellent, consistent results each time, which is what you want. Has somewhat of a natural cheese flavor to it, which is a plus. Only question is about refrigeration, is it required or recommended and, if so, when?
