I have been making cheese for personal use for 2 years. Mary Toth's A Cheesemaker's Journey is an easy to follow guide for the beginner and intermediate. I especially like her "how hard is this recipe" system. Her book is always right there beside you because the pages are laminated and the book is spiral bound. No worries about spills or pages turning themselves. A great how to book!
