Chamois Cheese Mold
This is a unique, doughnut shaped cheese mold. The hole in this mold provides more surface area on the cheese, so that no point in the cheese is far from the edge. This causes the cheese to ripen like a smaller cheese would. This mold is best for surface ripened and washed rind cheese, requiring little to no pressing.
The additional surface, of the finished cheese, is ideal washed rind cheese, allowing for more surface to be washed and a complex flavor to develop throughout.

Love the mould - easy to use - everyone thinks it’s a cake!! Made a Drunken Cow for my first cheese in this mould and it looks sensational. Can’t wait to make a different variety.
I occasionally veer from hard ripened cheeses to make a few soft ripened cheeses for personal consumption. The chamois mold was a real delight. This is easy to use and requires less flipping when the cheese is in its most fragile state. It also solves the challenge of having an under ripe middle and over ripe edges. Easy to slice into serving size portions, it's a real show stopper for entertaining when the hole is filled with an accompanying condiment.
