This organic lamb rennet paste (SemiPiccante) by WalcoRen is a non-GMO, pure natural lamb rennet paste that is based on the production of traditional rennet paste. This rennet can be used to make aged cheese where sheep lipase is desired for the development of typical ripening flavors. Mixtures of milk, or pure cow milk, also work well with this rennet.

Directions
Shake well before use.
Mix required amount of rennet in about 1/4 cup cool, non-chlorinated water. Immediately add diluted rennet to milk, gently stir for 1 minute, to evenly distribute.
Note: The amount will vary on the condition of your milk, season and type of cheese you are making.

Very weak rennet, I am using it in combination with other rennet I have because I haven’t figure out how much to use.
Used the lamb rennet for the first time today making raw sheep milk cheddar cheese and all I can say is WOW! Very impressed with this product. The structure of the curd in the vat was noticeably different than when using calf rennet and the taste of the squeakers was delicious; mild, creamy with a hint of piquant flavor. The lamb rennet compliments the sheep milk perfectly. Thank you for offering this product.
Wonderful to finally have lamb rennet to use with my ewes' milk. The rennet coagulates milk fairly quickly, go light on amounts. Be sure to shake well before using. Flavor in young cheese very pleasant, waiting for more wheels to age.
