How to recalibrate
Since the cheese making process happens at temperatures similar to our healthy body temperatures, a good quality medical thermometer can be used to calibrate your thermometer.
- Run warm water between 88-98F into a container deep enough to immerse both thermometers.
- Place thermometers in the water, check temperature readings once they have stabilized.
- If your new thermometer is not reading at the same temp as the medical thermometer, locate the nut found under the dial head.
- Using a wrench, turn the nut clockwise or counterclockwise as needed until the needle reads the same temperature as the medical thermometer.
- Repeat this process as needed.

The clip defaults to angle the probe toward the center of the pot, not straight down the site. Which is fine, until you’re storing and it’s in the way. So, having tried a number of says to position the clip - found just holding it out of the way, works best. When slowing heating curds and storing is the main issue - as I want to keep the probe in the milk/cheese, as removing it and bringing it back takes time for the temperature reading to stabilize. Depending on your pot and amount of milk involved you may want the longer or shorter version. cheers, Fred
The 12” thermometer is perfect for making cheese. Has just the right temperature range and easily clips to your pan for easy reads. Wouldn’t make cheese without it! ❤️
We had been looking for a thermometer that had this range. Most don’t. We are new to making mozzarella and were excited at our results until our original thermometer broke. Finding this one has brought back our enthusiasm. Works great just wish the probe was longer.
I ordered a second thermometer because the Tel-Tru is the most acurite of all. I sometimes do more than one batch of cheese. I would recommend it.
