Description

This Thermophilic culture is used in making a variety of cheese, including Mozzarella, Parmesan, Provolone, Romano, Swiss, Gruyere, and other Italian style cheeses, which require higher temperature ranges.

Five individual packets are included, for easy use. Simply add one packet directly to heated milk to begin the cheese making process. This culture is great for beginner and advanced cheese makers alike.

Work in progress.

I just used this culture for the first time today to make some Swiss cheese. It may be several weeks before I can evaluate the performance of the culture.

Only buy from New England Cheese Making Supply Company

I bought cultures off Amazon that didn't work (explains the free shipping). The cultures I bought directly from the NECMSC worked, spot on!

Mozzarella

I bought this product through another vendor on Amazon that turned out to be a dud and would explain why prime shipping is free. A different line from a different vendor couldn't achieve the acidity needed for mozzarella. I finally just bought the culture directly from the New England CheeseMaking Supply Company and voila! Mozzarella. I wasted a lot of milk and time when I should have just bought what I needed from the source.

Thermophilic C201 covers hard cheese base

I used C201 with Flora Danica to make fourme d'ambert, an impressive blue cheese that wows a party and even turns blue sceptics into fans. It also works well for gruyere.
