Description
This cheese trier is used to test the readiness of aged cheese without cutting it open. When inserted into cheese a sample core can be removed, the sample is evaluated for taste and texture, the remaining plug is then pushed back into the aging cheese.
When done testing, the opening around the plug should be sealed with a smear of the cheese sample to prevent mold from entering the cheese body.
Using a cheese trier allows you to evaluate the cheese making process (flavor, moisture, acid, texture etc) earlier in the aging cycle and make adjustments needed for subsequent batches of cheese. The time you save by sampling the cheese earlier makes the addition of a cheese trier well worth the investment.

Care
Should be boiled, to sterilize, before each use.
After use, wash in hot soapy water and allow to dry.
Dishwasher safe.

It’s what’s inside that counts!
I’ve been holding off from using my new tool and it hasn’t been easy. My wait has paid off! Testing my 12 month old Sun-Kissed São Jorge was so much fun. Yup, my cheese is ready to plate. This trier is so easy to use! It’s very sharp, so use with caution and don’t try to lick the crumbs off the blade!

Love this trier. It takes the guesswork out of the proper aging of your hard cheese, without having to cut open the cheese.

Tiny but mighty
I am glad I spring for the solid tool. This is heirloom-strength, and is giving my cheesemaking a boost since I no longer have to guess if a particular wheel is aged enough. As someone who values being able to crack open a really good cheese at a potluck, this is my new secret weapon. Leather case would be overkill in my kitchen, the plastic sleeve it comes in is good enough for me.
