This is a heavy duty mold and worked great in preparing a horseradish jack cheese. Still waiting for a taste, but the mold formed a nice solid brick that I then waxed. I used 3 gallons of raw milk, Jim Wallace's Pepper Jack cheese recipe (mixing in 187 grams of finely grated raw horseradish root just before putting curds into the mold) and the resulting mass filled this mold entirely. The final weight before waxing was 1.912 kq (4 lbs 3.5 oz).
This mould is much better than the description and will hold up to 6 pounds of cheese. I would not recommend it for anything less than 4, however. Its sturdy design should withstand any amount of pressure applied without warping. I pressed for 4 hours and 3.19 psi without any problems and the cheese came out beautifully. The rectangular form is also a cave space saver, and I can get approximately 25% more cheese in my cave versus wheels. My only regret is that I didn't have this mould sooner.
Nice thick mold. Definitely good for a 4 lb cheese. I purchased this one and the 2 lb mold to make an American Brick Cheese. I made the 2 lb recipe and put it in this mold I wish I had doubled the recipe now just to take advantage of the whole mold. You won't be disappointed with either one.
