I have met many people that tell me they don’t like Blue Cheese, my reply is usually ‘You just haven’t tried the right one yet.’
Blue cheese comes in many colors,. Blue, Green, Blue-Green or Grey. Its base can be snow-white, gold, or red-orange. Blue cheese can be made from Ewes, Cow, or Goat milk with varying levels of fat and moisture.
When making blue cheese, the process can be low or high temperature driven with either Mesophilic or Thermophilic cultures and can be aged a matter of weeks or months to express a range of flavors.
In this guide we’re focusing on a style of Blue Cheese that is famous throughout the World, Roquefort, but making it with Cows milk instead of Ewes.
