Directions
Use approximately 1/8 tsp for 1-2 gallons of milk. This is an estimated guide for usage. Setting temperature, stage of milk and type of cheese will call for specific amounts to reach proper acidification rate.
Reduce culture amount by 25-50% when using raw milk.

Feta Fetish
I really like the MT1 culture when I make goat feta. A fabulous tangy flavour without being overpowering when using goat milk. I previously made my feta with Meso II, but now prefer this culture. I make a 2litre batch every other week as it is wonderful in pasta dishes & on my husbands homemade pizza.
