Description
This Manchego cheese mold will impart the traditional and unique, woven basket design, commonly associated with Manchego cheese, onto the surface of finished cheese.
Each mold includes a base, beautifully patterned liner and follower. The liner is approximately 1/4" thick.
The pattern within these molds is based off of the original woven grass forms that were traditionally used in Spain. Once formed, this beautiful pattern will be imprinted on the entire surface of the finished cheese.

sturdy well built mold
The mold is very sturdy and well made. We are using with good success. The only issue I have is that the website doesn't list the sizes. I called and spoke with a rep asking for the size of the mold to match the molds I already have. The rep confirmed the largest mold would match, but when they arrived, it was clear they were significantly bigger. Too much of a hassle to return, so we are making due. Would help to have accurate measurements on the site.

Stunningly beautiful mould
the very first time I used my 4 gallons Manchego mould It exceeded my expectations. it holds 4 gallons perfectly, and the pattern held through flipping and a final resting without the cloth. I plan on using this mould for other cheeses as well it’s just too beautiful

Manchester mold and culture
I was surprised to see how well this mold is made. Very sturdy and well draining the culture I purchased with it as well as other cultures I've purchased are always great!

Great mold, but a little tricky
I just got this 2 lb mold and was a little confounded by it. Are the pieces supposed to come apart? Do I use it with cheesecloth? It would be SUPER helpful if it came with some instructions and answers to questions like these. :) The recipe I used was Saffron Infused Mancheco (using 2 gallons of milk for a 2 lb yield) from Artisan Cheesemaking at Home by Mary Karlin. I DID use it with cheesecloth and still got the wonderful pattern. The cheesecloth helped remove it from the mold, although it was a little tight to pull out. I think it would have been hard to get it out without the cheesecloth. The pattern really does add an impressive flare to the cheese!
