I've been using these to make small to medium sized cheeses and a basket cheese variety and they are worth the purchase! They clean up well, handle a bit of weight (for pressing out water), and produce a lovely end product! I would buy them again.

These baskets are easy to use, medium sturdy, perfect size and I LOVE LOVE LOVE the traditional pattern they make. I would use caution if you "boil" sterilize your equipment, they are not as thick as regular cheese molds. They will get soft if they are submerged in the boiling water (YES, I broke one doing this). So now I just scald them, place them on a sterilized surface to air dry. I do make sure I boil my muslin though to keep it all clean and kooty free. NOTE: this does not warrant loosing a star, nor a deterrent to buying them. I just made a batch of raw milk CACIOTTA and used this mold to give it a traditional "basket" imprint. Because of the stufatura (steaming) process, I used muslin in the form-but the pattern still turned out great. Now I have to painfully wait the aging process, giggle. I highly recommend using them also for the traditional ricotta recipes too. I will be making a large batch of whey ricotta from my raw milk parmesan batches this week -so I am glad that several come in this pack, that is very convenient. I now do not have to worry if I have enough baskets for my large batch of fresh ricotta and my ricotta salata I will be making. FIVE STARS ALL AROUND! CHEESE ON MY FRIENDS! j

They’re not as sturdy as the regular molds, and probably wouldn’t hold up under a bunch of weight, but that’s not what they’re for. You do get a bunch of them, which can be very useful. I’m glad I bought them.
