I don't know if this is a legitimate use, but I have been using this mold to press all my cheese at once without having to have multiple molds (I have been making five gallon batches). Then I cut the cheese into rounds the size I actually want for brining and aging. Seems to be working just fine. Strong mold. Great price.
I ordered 2 of these molds when they first became available in 2016 and have used them several times. They are excellent for making this cheese and Stilton. They are tall allowing a lot of curds to fit into them which allows the weight of the curds to compact themselves yet allowing airspace for the proper ripening. I usually use 4 gallons of milk when making these cheeses and have no problem getting the curds to fit into the mold.
