Reed Cheese Mat $3
This reed cheese mat is used when air drying cheese, especially soft, mold ripened cheese. Using this mat will allow whey to drain and air to circulate when cheese is draining, air drying and aging.
- 9" x 9" Bamboo reed mat
Mat should be boiled, to sterilize, before each use.
After use, rinse in cold water to remove any curd/cheese, then wash with not water and a neutral alkaline cleanser or dairy wash. Commercial detergents are not recommended.
If needed, soak mat in a wash solution before cleaning.
If mat retains any odor after cleaning, hang outdoors in the sun, this is the traditional method used in Europe.

This is an affordable and study mat for cheesemaking. I've been making mostly bleu cheese, and it's coming out great.
Love these mats
They are a perfect size to fit two wheels of cheese and keep the moisture off the bottom. Will be getting more of these!
Great for drying
I have just finished making the pepper jack cheese. I found that the reed mat is perfect for putting the finished formed cheese on to dry a few days before waxing. It is just the right size.
New, but love it!
I am fairly new to making hard cheese. I was putting my cheese wheel on a plate to dry with a fly net over the top. but, which ever side was down, still turned wet. This mat helps air to flow, and wick away from the wheel, and let me get it to the next step faster!
