Reed Cheese Mat
This reed cheese mat is used when air drying cheese, especially soft, mold ripened cheese. Using this mat will allow whey to drain and air to circulate when cheese is draining, air drying and aging.
- 9" x 9" Bamboo reed mat
Mat should be boiled, to sterilize, before each use.
After use, rinse in cold water to remove any curd/cheese, then wash with not water and a neutral alkaline cleanser or dairy wash. Commercial detergents are not recommended.
If needed, soak mat in a wash solution before cleaning.
If mat retains any odor after cleaning, hang outdoors in the sun, this is the traditional method used in Europe.

These are perfect for aging your home made cheeses. Allows air to circulate. Simply sprayed with vinegar to minimize mold, I now use them all of the time and this website has the best price around.

Over 20 Years a Fan
Over 20 Years ago I got my first cow and began the adventure of becoming a cheese maker. Suffice it to say that after much struggle and failure, I discovered New England Cheesemaking, and it all turned around. I bought a complete kit that came with Rickie's book, which she autographed. I loved that book and used it for all my Cheesemaking. Sadly that book was damaged and I haven't been able to get another. My husband passed away and I'm not able to have cows or goats anymore. But I will always be a fan of we England Cheesemaking.
