Description
Biena (Abiasa) Thermophile Type C culture starter culture can be used to make a variety of Alpine style cheese including Gruyere, Fontina and Beaufort. This culture also works well with propionic bacteria for eye production in cheese such as Emmental and Jarlsberg.

Directions
Use approximately 1/2 - 1 tsp for 1-2 gallons of milk.
Add culture directly to the milk when called for in recipe. Sprinkle on top of milk and allow to rehydrate for 1-2 minutes, then mix thoroughly to distribute culture evenly.

Would be nice if the packaging had some information like the starter strains and dosing recommendations or strength of product.
Used it to make a goat milk Gruyere-style cheese. Came out phenomenal! Definitely recommend this blend of culture!
Great culture - it worked very well for the batch I made with it. But...beware! The powdered culture is loose in the bag - this is not a foil bag with packets inside. I tore into it and culture dust went flying. Oh well...live and learn.
Since I did not have MA4002, I used C63 Thermo C in combination with MM100 to make manchego. Looks like it did the job successfully.Withheld one star because of price point.
