Arrived with rusty patches, but they polished out
I'm mainly happy with this curd knife. I like that it's long enough to keep the handle/grip out of the cheese pot. I was disappointed that it arrived with rust on both edges. (See first pic.) Per the advice in Gianaclis Caldwell's book (Mastering Artisan Cheesemaking), I polished the rust away (S.O.S. pad in my case) and wiped the blade with lemon juice. Thus far, this seems to keeping new corrosion at bay. (See second pic.)
