I got this mold as I am experimenting with making a triple cream cheese which I wanted to have a square appearance. The ordering process was quite simple and it arrived at my house promptly. The product is made from thick plastic and you can see the reinforcing bars in the pictures on the web sites. Pouring the curds in to the mold is a simple matter, of course. The biggest "trick" is to remember that there is no bottom, top, or follower, so you have to make sure you know to have something to catch them before you make a mess! (is that the voice of experience? I leave that to your imagination! :-) ) When taking the cheese out and flipping it, or removing it to your cave, the mold does not grab on to the cheese, as the material it is made of is slippery enough. It cleans very easily and is ready for another use almost immediately. All in all, a very easy product to use and should last a lifetime. Worth a Five Star rating!
I now have 32 of these moulds and they are used to make tonnes of feta. They are very strong, easily washed in a standard dishwasher, and easy to store. I highly recommend them.
We picked up two of these molds to try making crescenza, and we succeeded on our first try! They are very thick and rigid so will last for a lifetime of cheesemaking.
