This Saint Maure cheese mold can be used to make traditional Saint Maure style cheese.
Saint Maure is a classic goat cheese originating from the Loire region of France and has been made there in much the same way for over one thousand years. It can be easily recognized by its long form and small log-like shape.
This simple log shape or 'Buche' has been copied throughout the world, so it is no surprise that so many goat cheeses in our supermarkets today are presented in the familiar log-like tube with the plastic robes.
