Directions
Add annatto cheese coloring before Calcium Chloride and Rennet. Dilute color with cool, non-chlorinated water.
For a warm cream color add about 20-30 drops for every gallon of milk.
For a bright bold color add 100+ drops for every gallon of milk.
Note: Keep annatto cheese coloring out of contact with salts.

Cheddar using Annato
I can't wait for Christmas when I can make that first cut into my cheddar! I used Annato colorant from New England Cheese Making Supply Company. From the original ordering, to fast shipping, to ease of use of the colorant, everything was 100% great!

Does what it is supposed to do
The Curds from two gallons of Whole Milk with 1/4 tsp Annatto Coloring in 1/4cup non-chlorinated water turned out great in color. This was for a marbled-like mix of Colby cheese. The picture of the mixed cheese curd in the form is after the first 15 minute press. This product is well worth it for the look.
