CHY-MAX® is a double strength, NON-GMO, gluten free pure chymosin rennet produced by submerged fermentation on a vegetable substrate. This rennet can be used for producing any type of cheese; hard, semi-hard, soft, mold-ripened, low-fat and ingredient cheeses.
Liquid rennet is easy to measure and add to milk, which makes it a favorite for both beginner and advanced cheese makers alike.

1/4 teaspoon will set 2 gallons of milk in approximately 45 minutes

This rennet is double strength, we suggest using half the amount recipes call for.
Mix required amount of rennet in about 1/4 cup cool, non-chlorinated water. Immediately add diluted rennet to milk, gently stir for 1 minute, to evenly distribute.
Note: The amount will vary on the condition of your milk, season and type of cheese you are making.

I only wish that I started with liquid rennet! This is so much easier and , by far, more accurate than pills or granules. Most recipes that I use are based on using the liquid as well. A sure win!
I bought this to make skyr - it works wonderfully! Although I've never entertained the idea of making cheese, now I'm excited to try it! I'm so glad I found this product and this company. Customer service, shipping, Web site, e-newsletters (complete with cheese recipes) has all been fantastic!
I ordered this rennet for a biology enzyme lab, and it worked exceptionally. I used more than recommended for cheese making, since my focus was the chymosin activity, but it set the milk quite rapidly even after only 30 minutes at some temperatures. It produces consistent and good results for milk coagulation/ cheese making, and the delivery arrived fairly fast as well :)

We ordered rennet, which was shipped to us in Ancaster, Ontario, Canada on January 25. It arrived this morning, February 8th. With Covid impacting mail service and customs it has taken longer than hoped, but we are delighted it has arrived! Cheers, Inez Gibbons
