This Saint Maure cheese mold can be used to make traditional Saint Maure style cheese.
Saint Maure is a classic goat cheese originating from the Loire region of France and has been made there in much the same way for over one thousand years. It can be easily recognized by its long form and small log-like shape.
This simple log shape or 'Buche' has been copied throughout the world, so it is no surprise that so much goat cheese in our supermarkets today are presented in the familiar log style cheese.

These are sturdy and work just great - I rubber banded a few of them together to keep them upright. I didn't use them for Ste-Maure, specifically, but just a couple of basic bûcherons, and they're aging well!

Got two of these molds and love them! Totally worth it and at a good price too!


The Saint Maure cheese mold if perfect for making Saint Maure cheese, as well as other soft bloomy rind cheeses. Over the weekend I used it to quickly shape a uniformed chevre log, which I also rolled in herbs de province, for a great party addition. This mold is a great size for soft cheeses. I tied up five molds to create a batch of Saint Maure that aged in time for Thanksgiving and found that tying the molds together made it easier to manage as they drained. So easy to clean and also easy to store.
I actually use this for my chèvre because I like the shape and it makes it easy to wrap. I bought a couple and they’ve held up well and I just toss in the dishwasher to clean and sanitize. Would love to try other shapes in the future.
