Valencay is a well known cheese which is made using a pyramid shaped cheese mold. This cheese is one of the French classics and with it's beautiful rind which is first coated with ash before aging.

Love the large pyramid molds. Combine those with great New England Cheesemaking recipes and great classes by Jim and you have the perfect combination for some really great cheese and a lot of fun making it. This weekend I made goat with ash and Camembert. New England Cheesemaking is my number one source for all my recipes, supplies and great cheesemaking classes.
I bought the small size to make Valencay and the cheese came out perfect and beautiful. I love this mould! I bought 3 of them and may buy a 4th. 1/2 gallon of raw milk filled 2 of them as a test batch, and I will definitely be making many full sized batches. I used Jim's recipe and it worked perfectly!
These molds are sturdy and well built for drainage. They make a very different and dramatic shape of cheese which always draws attention. One warning--they are easy to tip over, so I put them inside a larger mold to contain them. These molds provide the perfect sized cheeses for 2 or 3 people, but you will likely need at least 3 or 4 of them for most recipes.
