Starter cultures and rennet tablets should be stored in the freezer. In the freezer, cultures will last 2+ years and rennet tablets will last for 5+ years.

It was a great experience! It is a very fun process and even though some of the steps did not come out entirely as "picture perfect" ( curd setting and cutting presented some difficult troubleshooting) the end result was still a fantastic cheese! I love to scroll through the vast list of cheese recipes available on your website and I am looking forward to making more cheeses!
Ricki's Basic Cheesemaking Kit is a nice kit for beginners. I'm getting back into making my own cheese after 20 years and this kit was a good value.
I am a beginner in cheese making, and I do not think that parmesan, Colby or gouda cheese are for beginners. I only made feta cheese and little whey ricotta so far. Feta was looking good at first, but next day it became not so good, kinda slimy, in light brine solution, and taste was off. I baked it with tomatoes & peppers, and it turned out good, but I am somewhat disappointed with my result.
This is our first time making cheese. We did not realize all that went into making cheese. It gives us a better appreciation for cheese makers! The directions are easy to follow. There were many helpful side notes. My only request would be to give measurements in smaller quantities. We have a Nigerian Dwarf Goat, so it would take almost 2 weeks to get 2 gallons of milk from her. We have made cottage cheese and Gouda cheese so far. We are very happy that we found New England Cheese Making Supply Co!
Bought this for my husband to start his journey making cheese. And I am glad I did. Has everything a first time cheese maker needs to fall in love with it.
