Fine Mesh Cheese Mat $4.25
This fine mesh ripening mat for cheese making is used when air drying a variety of cheese, especially soft, mold ripened cheese including Chevre, Brie and Camembert. Because this mat has a fine mesh, it will leave less texture on the cheese surface, and is less likely to pull mold as cheese is flipped when aged.
Using this mat will allow whey to drain and air to circulate when cheese is draining, air drying and aging.

Mat should be boiled, to sterilize, before each use.
After use, rinse in cold water to remove any curd/cheese, then wash with not water and a neutral alkaline cleanser or dairy wash. Commercial detergents are not recommended.
If needed, soak mat in a wash solution before cleaning.
If mat retains any odor after cleaning, hang outdoors in the sun, this is the traditional method used in Europe.

It should do the job
I have not personally used the above mentioned item yet. I am new to cheese making. The item seems rather small, but I hope it does the job it is intended for.
Fine Mesh Cheese Mat Does the Job!
I had been unhappy with the amount of Brie that I had been losing to the bamboo mats I was using under and over the cheese forms when I would flip the cheeses the first few times. Cheese would become stuck to the bamboo mats and was lost. However, with the fine mesh mats, the cheese does not stick to the mats and cheese loss is minimal. More of my cheese is making it to the table. A Great Product!
Perfect for medium-size hard cheeses
I got the "large" roll of the mesh so I could cut it to size to fit my applications. I cut off a square size (8"x8") to use under a wheel of cheese from the medium sized molds sold here; I can fit a 2-4 lb. cheese inside an old Rubbermaid plastic container with a square mat underneath to help improve airflow and reduce sticking. I cut off a longer piece (8"x16") to line a wire shelf in my "cheese cave" (a small wine fridge), to provide more support. Works great! And easier to scrub clean than the bamboo mats.
