5 Grilled Cheese & Chocolate Sammies!

We know you know how to make a grilled cheese sandwich. And, if you love cheese as much as we do, you probably make a darned good one.

However, have you ever made it with chocolate added to the cheese? It seems like the perfect Valentine’s Day lunch.

We did some research and apparently a lot of folks have given a lot of thought to this combination and so there is a wide variety of choices. (Of course, if you have your own recipe, please do share it.)

1. Dark Chocolate and Parmesan Grilled Cheese Sandwich

Ingredients:
2 slices country bread
2 ounces dark chocolate (64%), coarsely chopped
6 thinly shaved slices Parmesan cheese
cooking oil spray

Directions:
Layer one slice of bread with the chocolate and then with Parmesan cheese and top with second slice of bread. Microwave for 30 seconds.
Heat a panini press, grill pan or skillet. Spray the surface and the outside of the bread with cooking oil spray. Grill until bread is golden brown and chocolate and cheese are oozing. Serve immediately.

Ingredients:
Brioche
Nutella
Marscapone
Dark Chocolate
Butter

Directions:
(Note: Don’t substitute the mascarpone – it’ll make your toastie creamy, rich, and sweet. Don’t substitute another soft cheese, like ricotta, as it’ll be too watery.)
Start by thinly buttering your brioche slices.
The butter is to keep the sandwich from sticking to the pan, so you only need a smear. You could use plain white bread if you want, but rich brioche will give your sammie an indulgent touch.
Smear a bit of nutella on one piece, and some mascarpone on the other.
Resist the urge to add too much, as it’s gonna ooze.
Place a square of dark chocolate in the centre.
You can use milk chocolate here too, but dark will add a touch of bitterness. You could also add a pinch of sea salt too.
Put sandwich buttered side down and cook, flipping once, until both sides are golden and the chocolate is all melty, about 6 minutes.
Once the bottom is golden, flip it.

3. Honey-Cured Bacon, Stilton and Chocolate Sandwich

Ingredients:
Makes 2
4 thick slices of crusty white bread
Salted butter, for spreading
1 3/4 oz dark chocolate (70%)
6 slices honey-cured bacon
2 1/2 oz very ripe Stilton

Directions:
Preheat the grill and lightly toast the bread on both sides, then spread with butter. Grate the chocolate on top and return to the grill briefly to melt.
Remove and immediately put the bacon under the grill until the edges are crisp and caramelized. Place the bacon on top of the chocolate and finish with a crumbling of stilton. Lay the remaining buttered slice on top and press firmly.

4. Balsamic Roasted Cherry, Dark Chocolate and Brie Grilled Cheese Sandwich

Ingredients:
1/2 cup cherries, pitted and halved
1 teaspoon balsamic vinegar (or brandy or port)
1 tablespoon butter
2 slices bread
1 1/2 ounces brie, room temperature
1 ounce dark chocolate, chopped, room temperature

Directions:
Toss the cherries in the balsamic vinegar, place them on a baking sheet in a single layer, roast in a preheated 450F/230C oven for 15-20 minutes.
Heat a pan over medium heat.
Butter one side of each slice of bread, place one slice in the pan with buttered side down, top with half of the cheese, the chocolate, cherries, the remaining cheese and finally the other slice of bread with buttered side up.
Grill until golden brown and the cheese and chocolate has melted, about 2-4 minutes per side.

5. Chocolate Chip Cookie Grilled Cheese Sandwich

Ingredients:
Two similarly sized chocolate chip cookies
Cheese that melts well – You can use classic American cheese or get fancy. The cheese in the photo is herve mons pave du norde.

Directions:
Preheat oven to 350 F.
Cut cheese into thin slices and place between two cookies.
Place cookie sandwiches onto a cookie sheet lined with parchment paper.
Bake for five minutes or until cheese is melted.
Tip: This method works even better if the cookies are still hot from the oven. The cheese will melt very quickly and you may not even have to put the cookies in the oven.
