For the love of cheese and chocolate

This is the best Valentines Day gift for anyone who loves cheese and chocolate! Not only is it easy to make, it’s also an amazingly unique gift that your valentine is sure to love!

I was originally going to make a batch of mascarpone and chocolate truffles for my own valentine, but while preparing for quality time in the kitchen, I had an epiphany. What about a box of chocolates cheese and chocolate! Wow, sign me up and let’s get started!

Find a lovely box

Since I needed a box to put the cheese into, my first step was to buy a box of chocolates. Yes, it was a sacrifice but don’t worry, I took one for the team. Now I have a little bag of delicious chocolates hoarded away in the fridge. (I’m sure you could use any good-looking box for this project. Unfortunately, a lovely heart-shaped box that embodied all Valentine’s day stereotypes was calling my name.)

Get cheese and chocolate

Once you have the perfect box, it’s time to get some cheese and chocolate. The combinations are endless – an easy way to find a great combination is to ask your local cheese monger what cheese goes good with chocolate.

Another great option many of you have is to select some of your own, homemade cheese. I chose two slightly sweeter alpine style cheeses with a nice salty undertone to complement the chocolate.

Dip and drizzle

With cheese, chocolate and my lovely heart-shaped box, I was ready to begin.

First I melted three chocolate bars in a double boiler on low heat. I stirred the chocolate occasionally, although with the low indirect heat it may have melted perfectly on its own.

As the chocolate melted, I cut the cheese into bite sized pieces. Yes, I sampled them for quality control as I went. That’s how everyone cuts cheese, right?

After the cheese was cut I laid waxed paper over the cutting board.

With the chocolate melted and cheese cut, I began dipping, spreading and drizzling.

First, I dipped a few pieces of cheese into the chocolate by hand, coating them about half way and then placed them onto the waxed paper.

Next, I dipped some more cheese bites in all the way. It’s easy, all you do is drop the cheese into the chocolate, remove it with a spoon and set it onto the waxed paper.

The last method I used was to make a row of cheese and drizzle chocolate over the top with a spoon.

I can’t say which method I liked most because they all came out great!

Once I was done, I placed the cheese and chocolate into the fridge for half an hour to cool. Once the chocolate was hardened, I placed most of the chocolate cheese bites into my heart-shaped box. I say “most” because some of them may have gotten “lost” along the way.

Let the chocolate flow

The trick is, it doesn’t have to be perfect. Let the chocolate go where it wants to and you’ll end up with a totally custom, gourmet looking box.

Don’t sweat it

One more tip is to keep the box in the fridge then take it out right before eating. This won’t let the full flavor of the cheese shine but since cheese tends to sweat slightly and the chocolate can soften, this treat is best eaten and enjoyed right out of the fridge.

Bonus… chocolate dip!

You’ll most likely have left over chocolate when you’re done and it would be a shame to let it go to waste. Feel free to dip everything in your cupboards that’s edible into the chocolate and enjoy!

I’m not kidding! It’s amazing how melted chocolate makes everything taste better. Chips. Walnuts. Apples. Raspberries. Frozen bananas. Bacon. Graham crackers. Marshmallows. They’re all amazing on their own but with chocolate, they reach a whole new level of perfection!

This box full of chocolate covered cheese bites is the ultimate Valentine’s day gift for cheese and chocolate lovers!
Ingredients
  • 1 lb cheese
  • 3 chocolate bars
Instructions
  1. Melt three chocolate bars in a double boiler on a low heat. Stir occasionally.
  2. As the chocolate melts, cut cheese into bite sized pieces.
  3. Lay waxed paper over a cutting board or cookie tray.
  4. One the chocolate is melted coat the cheese bites with the following techniques.
  5. Dip a few cheese bites into the chocolate, only coating them about half way. Set them onto the waxed paper.
  6. Completely dunk a few cheese bites, retrieve and set them onto the waxed paper with a spoon.
  7. Make a row of cheese bites then drizzle with chocolate using the same spoon.
  8. Set the tray in a fridge for half an hour, so the chocolate hardens.
  9. Once hardened, the cheese and chocolate bites can be placed into a box lined with paper cups.
Notes
Store in a fridge and remove right before eating. Since cheese tends to sweat a little and chocolate can soften this treat is best eaten and enjoyed right out of the fridge.
