Strawberry Cobbler for Valentine's Day

It’s the sweetest time of year again! We combined a couple of recipes to come up with this one – simple and yummy and just the treat for your sweetie on Valentine’s Day.

I used frozen strawberries, cut in half, but fresh would be better if you have them.

Strawberry Cobbler

Ingredients:
8 cups strawberries, hulled and sliced in half
1/3 cup sugar, brown sugar or coconut sugar
1/4 tsp salt
2 tsp vanilla
1 tbsp butter, diced into small cubes

For heart biscuits:
3 cups all purpose flour
1/4 cup sugar or honey
1/2 tsp lemon zest (optional)
2 tsp baking powder
12 tbsp cold butter, diced into cubes
8 ounces cream cheese, cubed
3/4 cup buttermilk

For brushing on:
1/4 c heavy cream
raw sugar

Directions:
Preheat oven to 350F.

In a large bowl combine strawberries, sugar, salt and vanilla.

Toss to combine and transfer to a large, greased 10 or 12-inch skillet, patting down strawberries so they create a flat level surface.

Tuck in 1 tbsp of butter that has been cut into small cubes and distribute under the berries. Set aside.

In a food processor, pulse together flour, sugar, salt, lemon zest, and baking powder.

Add butter pieces and mix until texture is course and crumbly.

Transfer mixture to a large bowl.

Whisk together the buttermilk and honey or sugar and add to the mix. Carefully stir it in, trying not to mix too much.

Add cream cheese.

With floured hands, grab dough and transfer to a floured surface.

Roll out and cut into 8 heart shapes with a heart shaped cookie cutter.

Place hearts with one in the center and the others facing out.

Brush hearts with heavy cream and top with a sprinkle of raw sugar.

Bake for 35-40 mins until strawberries are bubbling and biscuits are golden brown.

Allow to cool slightly for 10 minutes to allow sauce to thicken a bit.
